The Olmecs, inhabitants of ancient civilization atound 3000 BCE in Mesoamerica are believed to be the first to cultivate cacao and use it to create a drink. They consumed cacao as a ceremonial beverage or for medicinal purposes.
The Maya people from a civilization that flourished in Central America and Mexico(250–900 CE) made a frothy, bitter drink by fermenting, roasting, and grinding cacao beans, then mixing the paste with water, chili peppers, and other spices.
